The Pancake Pantry (Hillsboro Village) was founded in 1961 by Mr. Robert Baldwin and later taken over and managed by Bob’s son, David Baldwin. The Pancake Pantry is a breakfast concept that on average serves almost 700 customers a day.
Interesting fact: A second location was attempted in 1964 on 4th Ave. in Downtown Nashville. However, the downtown location failed due to an underwhelming amount of foot traffic, which is drastically different from downtown Nashville today.
The Pancake Pantry (Downtown) opened in December of 2021. It took six to eight months with no marketing for customers to find the new location, but ever since, the numbers have mirrored the original Hillsboro Village location.
