The Pancake Pantry (Hillsboro Village) was founded in 1961 by Mr Robert Baldwin and later taken over and managed by Bob’s son, David Baldwin. The Pancake Pantry is a breakfast concept that on average serves almost 700 customers a day. Interesting fact: A second location was attempted in the 1980s in downtown Nashville. However, the downtown location failed due to an underwhelming amount of downtown foot traffic, which is drastically different from downtown Nashville today.
